If MathJax doesn't render properly in certain situations, handle it a little bit better.

This was going to be a bug report until I tried a few more times.

Sometimes (almost always) inside Markdown lists, and sometimes inside parentheses, MathJax LaTeX doesn't even "try" to render (the renderer may not be picking it up).

I think now (only now do I think this) that it IS malformed model output (I've been using purely Gemini models (all levels scattered) for a bit now), so I'm thinking it IS malformed output.

It would be nice if we could Regex these unrendered, malformed LaTeX snippets and remove the leading and trailing "$" for better readability (maybe also change the color slightly after).
